Easter weekendBeautiful strawberry angel food cake (with a pudding whipped cream frosting) 

I was really photographically challenged last weekend. I couldn’t get my photos right, at all. They were over-exposed, out of focus, I was really struggling with my new camera. Uh. I just need lots of time with lots of practice.

Also, toddlers are very difficult to capture photos of. Juliet looked absolutely adorable in her Easter dress from her aunt Chris but I couldn’t get a great shot of her in it (with my Canon 7D). For the best photo I took of her all weekend check out my Instagram.

We spent the weekend in North Dakota with Erik’s family. I was a bit nervous about the 6.5 hour drive with Juliet but we’ve done it before and it usually goes well. Luckily, Juliet was really awesome driving both ways, happy and sweet.

As always, Erik’s mom, Karen, had a lot of delicious food (and way too much of it!). I am ready for a green smoothie tomorrow morning.

carrot cake cookie sandwichesI love cookie sandwiches. I know I’ve mentioned that multiple times before. And these carrot cake sandwich cookies are one of my faves. They are moist, not too sweet and totally delicious. Perfect for spring, perfect for Easter, perfect for anytime.

Juliet absolutely LOVED the carrot cake cookies, she had one before I added the frosting and devoured it faster than I’ve ever seen her eat anything. Then I tried one and I got it.

Fave things latelyToday’s post is a bit random. I was out of town last weekend in DC so I didn’t get any time in the kitchen plus I’ve been without a camera for a few weeks. So I have no new recipes/photos for the ol’ blog. I just received my new Canon 7D this week and I am pumped about it! I turned it on for the first time on Wednesday evening and realized I need some serious quality time with the manual because the 7D is a bit different from my old Rebel. I’m super excited to begin shooting with this upgraded camera.

I wanted to do a post on a few of my favorite things lately. The list is random, hence a random post.

DC girls' tripFlatbread at our bottomless mimosa brunch at Masa 14

I got back from a girls’ weekend in Washington DC Sunday evening and things have been a bit crazy on the work front (I’m actually taking a break from work right now to squeeze this post in).

My best friend Amy lives in DC with her husband. I love visiting because DC is an awesome town and generally the weather is a lot better there than in MN (not in the summer though, I can’t handle the heat). Last weekend was pretty cool, but still nice enough to be outside with only a light jacket or sweater.

Girls’ weekends are rejuvenating, fun, indulgent and super necessary (in my opinion). I take at least one a year. Erik is supportive of these trips because it means he gets his own guys’ trips but more importantly he gets one-on-one time with Juliet, which they both really enjoy.

peanut butter oatmeal cookies
After Erik, Juliet and I spent a bunch of time outdoors last Sunday (in the awesome 60 degree weather) we needed something to do the rest of the afternoon. So we made cookies.

I am a big fan of the Weelicious site (and cookbooks) because the recipes are generally pretty easy and healthy. And every single one I’ve ever made has turned out well.

I am a big peanut butter fan, like eat a huge spoonful right out of the jar big. And Juliet is too. She always asks for peanut butter with a spoon and a bowl and she eats it right up.
