Pumpkin recipe round-up

I love anything and everything pumpkin...pumpkin soup, pumpkin muffins, pumpkin spice lattes, etc. So when the temperature dipped into the 30's on Wednesday night (BRRRRR) in Minnesota my thoughts turn to all things fall and pumpkin is at the top of that list.

I realized I have no shortage of pumpkin recipes on my blog so I thought I'd do a pumpkin recipe round-up.

Pumpkin spice latte
Pumpkin soup with sage and gruyere croutons
Pumpkin whoopie pies

  5. Pumpkins are great, but so is the pumpkin's cousin, the wonderful acorn squash. I have to admit I am more of a squash lover than pumpkin! There's nothing better in Fall than baked squash with a little butter, a little salt, and a little brown sugar. XO

  10. I also love pumpkin! I am definitely going to try the pumpkin soup and that pumpkin mac and cheese linked in the comments.

    My personal recommendation is pumpkin pancakes. I sup a little less than 1/3 cup pumpkin for each egg in a Bisquick pancake recipe (it would probably also work with made-from scratch pancakes) and and cinnamon and nutmeg, and they are Amazing.

    As an added bonus, if you also used soy milk instead of milk, it is a really delicious vegan food.
