Amy and I have been best friends for about 17 years and have probably not missed more than a day or two talking on the phone since then (Amy lives in DC).
Amy is a vegetarian and loves kale.
We were chatting one morning and she launches into this conversation about how she's obsessed with kale. Then later that day she Gchats me about how she can't stop thinking of this kale salad she recently had for lunch. Confession, I have never cooked with kale. It's about time, right? I am sure Amy thinks so.
Kale recipes (I realize not all these recipes are vegetarians but most are):
Potato and kale cakes with rouille

Crispy kale with lemon yogurt dip
Kale spinach and pear smoothie
Kale and potato soup with turkey sausage
Spicy parmesan green beans and kale

I have an easy and delicious kale and ham recipe...it's kind of like a stew. Amy could easily make it vegetarian with tofu! I'll send it your way...
ReplyDeleteYes, I like kale a lot too. I made a pasta with kale in it yesterday. I have been meaning to make kale chips too b/c they are super easy and a good substitute for salty snacks.

ReplyDeleteThe February issue of Real Simple spent pages & pages extolling the virtues of kale. I'll bet you can find many kale recipes on their website.

ReplyDeleteMesculin Mix with crispy spicy kale (see recipe for crispy kale in Jenna's post, but had some cumin and red chili or curry powder), roasted butternut squash, sunflower seeds, and mushrooms and baked tofu (you can sub turkey or chickpeas for tofu) tossed in a cranberry vinagrette or the one I like is carrot chili vinagrette. I also sub quonia for mushrooms (not a big fan of mushrooms). The BEST part of the salad, for sure, is the spicy kale.
I've never been much of a Kale fan, but I made Kale chips, which are SO easy and SOOOO yummy! I also found that juicing with Kale isn't bad either. Have fun with your friend & let me know if you need any vegetarian recipes ;)

I just got turned onto kale this past year and feel like a better person everytime I eat it. I like sauteeing it with cubed butternut squash, shallots and garlic and throwing it over quinoa. It's like health-a-palooza in a bowl.

Perfect! I buy kale once a week, but always cook it the same way - sauteed with chili flakes, lemon, lots of garlic. I was just thinking that I need to try something new. Thanks for sharing these recipes.
